VINTAGE

Late frost, rainy spring, dull summer: this 2021 vintage will have put the nerves and bodies of the winegrowers to an hard trial. But thanks to hard work and perseverance, 2021 offers us wines of great freshness, with fruity aromas of a rare expressiveness.

 

VINEYARD

Château La Peyruche is located on beautiful hills overlooking the Garonne. This wine comes from a single plot of Cabernet Sauvignon (Le Pin - South part) on clay-limestone mixed with red gravel. The vineyard is entirely managed according to the specifications of Organic Agriculture.

 

GRAPE VARIETY

100% Cabernet Sauvignon.

 

VINIFICATION

The grapes are harvested when the aromatic maturity is reached. The vatting lasts from 10 to 15 days, at moderate temperature. These fermentation conditions give this wine its fruity character and supple structure. The wine is then aged in amphoras to reveal the fineness of its varietal character.

TASTING

On the nose, fruity notes of blueberry dominate and are completed by spicy touches. The tasting offers a typical expression of the varietal aromas of Cabernet Sauvignon, revealed by the aging in amphora. Its mouthfeel is characteristic with tannins that are stricter but still very expressive.

 

FOOD AND WINE PAIRING

This wine should be decanted for a good hour before tasting and will perfectly accompany a duck breast or a roasted rack of lamb.
